👨‍🍳 Cooking Steps

Step 1: Thaw the duck, wash it, soak it in water for an hour to soak the blood, then marinate it in cooking wine and old ginger slices for an hour. (These two steps are super important and cannot be omitted, otherwise the meaty duck will be too fishy to eat.) Then put the duck under cold water (no need to wash the cooking wineginger slices), boil and skim off the blood and cook for another minute, take it out and rinse it repeatedly with water, and set aside

Step 2: Put the duck into the pot, put the prepared seasonings in, and put two bottles of beer just enough to cover the duck. Bring to a boil over high heat, simmer over low heat for 10 minutes, then turn off the heat and soak for 10 minutes (this makes it easier to absorb the flavor)

Step 3: Then cook for another 30 minutes and then turn on high heat to reduce the soup. (Remember to stir back and forth to evenly absorb the flavor and prevent sticking to the pot.) When the remaining one-third of the soup is collected, scoop out the duck. Add the lotus root and cook for two to three minutes. Then add the potatoes and cook for another two to three minutes (why put the lotus root first? Because lotus root is not easy to cook and not easy to absorb the flavor.)
