👨🍳 Cooking Steps
Step 1: Wash the quail eggs with a little saltwater
Step 2: Wash and soak shiitake mushrooms for half an hour
Step 3: Boil eggs in a pot with cold water
Step 4: Cook for 5-6 minutes first
Step 5: After taking it out, put it into cold water immediately, so that the eggs will be better cooked later.
Step 6: After passing the cold water, use a spoon to slowly tap around the small head of the eggs. Do not tap the large bottom of the eggs, because the bottom can store the cooked soup.
Step 7: Place the beaten eggs into a pot of cold water
Step 8: Add tea leaves (any tea leaves can be used, I used soaked Yunnan white tea today), light soy sauce (3 spoons) and dark soy sauce (1 spoon) into the pot.
Step 9: Take 1/3 of the tangerine peel, wash it and put it in the pot
Step 10: Finally add the shiitake mushrooms to the pot together
Step 11: Simmer slowly over medium-low heat until the aroma fills the house
Step 12: Cook for 1 and a half hours, turn off the heat and soak overnight
Step 13: You can heat the eggs in the morning or take them out and eat them directly

1: Quail eggs are made in the same way as ordinary eggs. When knocking eggs, you must knock the small head, and the big head is used to retain the soup, which is more delicious when eating. 2: The salt degree can be tasted before taking it out of the pot.
